Cornstarch Alfajores are an Argentine pastry specialty! Today I will teach you how to make this very easy to make recipe!

Cornstarch alfajores are a typical Argentine specialty. They are made with a short crust pastry containing a high proportion of corn starch (over 60% of the dry ingredients). The dough is quite brittle after baking because the gluten content in the flour is not that high.
The first step to make these alfajores is to arrange the flour on the kitchen table together with the starch, the baking powder and the sugar Make a hole in the center and place the lemon zest, the butter and the yolks in the center and start mixing the ingredients with a dough scraper. Then finish kneading the ingredients with your hands to form a dough. Do not knead too much, just until all ingredients are combined and form a uniform dough. Finally, fefrigerate the dough for 30 minutes.
After this time, sprinkle the kitchen counter with flour and roll out the cold dough until it has a thickness of 3/16 inch. Cut out discs with a round cookie cutter of the desired size and place them on a greased baking pan.
Preheat the oven to 340 degrees Fahrenheit and put the cookies in the oven until they begin to get brown. This will happen aproximately after 10 minutes. Let the cookies cool down before beginning with the filling.
Alfajores are formed by 2 cookies with a caramel layer in the middle. The last step of this recipe is to pipe the caramel on the cookie helping you with a piping bag. After that, decorate each alfajor with grated coconut or ground almonds on its side.
This recipe yields 13 large alfajores and 18 small alfajores.
