In this recipe I will show you how to make a classic recipe of delicious French chocolate macarons, filled with a smooth chocolate ganache!

Today I will show you how to make delicious French chocolate macarons. The first step is to make the almond flour dough. Pass the almond flour, icing sugar and cocoa through a strainer 2 times. The ingredients that remain in the strainer will not be used. Then add the food coloring and the egg whites and mix well all the ingredients. After that, cover the bowl with the mix with a food film and set it apart for later use.
The next step is to make the italian meringue. First, put the water and sugar in a saucepan. Then bring the water and the syrup to 244°F. Begin to beat the egg whites with a hand mixer when the syrup has reached 230°F. When the syrup is ready, slowly, but continuously, pour it into the egg whites while continuing beating. Beat the preparation until it is cold and has reached a temperature of 104°F.
Next, add the Italian meringue to the almond-sugar-cocoa-egg whites mix. First one part and mix. Then the second part: carefully fold in the meringue until you can write with the mix on the surface. The next step is to put the mix in a piping bag and pipe the macarons on a silicone baking mat or parchment paper. After this, tap the baking sheet several times on the kitchen counter. This will allow excess air from the dough of the macarons to get out. Next, let the macarons dry until you touch their surface and it has harden. Finally, bake the macaron halves at 300°F for 10-14 minutes. After the baking, let them cool down.
The fourth step is to make the chocolate filling. First, bring the cream and honey to a boil and pour the hot ingredients over the chopped chocolate. Then leave the ingredients to stand for one minute and after that time mix them well. Next, add the butter and allow the mixture to cool. The last step is to fill the cold macarons halves with it.
This recipe yields 28 macarons or 56 macarons halves.
